Commitments… to a Meatless Dish and Salad
In an effort to stay healthy throughout the week, my husband I have agreed to do a meatless dish and a dinner salad once a week. So that is two nights out of the week we already know we have planned to have some healthy meals. Now, despite what some people think it is pretty easy to make either one of these unhealthy (add a ton of bacon, cheese, and ranch dressing to that salad, or do the same to that meatless dish and it’s no longer a healthy choice!). However, most of the time these things can be pretty healthy and tasty too!
For instance, I found a recipe online for a fall harvest salad. I created my own spin on it by including lettuce, grilled chicken, feta cheese, a few walnuts, craisins, celery and/or cucumber for some crunch and then some light dressing. My husband loved it! We got a lot of protein, veggies, and some good fats. I have read that using light dressing is also better than completely fat free because you absorb the nutrients better with the light dressing.
Our meatless dish last week was a spaghetti squash casserole. I was actually introduced to spaghetti squash fairly recently. I was a little afraid of it because let’s be honest, it looks weird! A big yellow ball that resembles a pumpkin inside with all those seeds and then turns into what looks like noodles? Strange! But oh so delicious and packed with some amazing nutrients! So once again, I searched for a recipe online that would work with spaghetti squash. I found a great one that included spinach, some marinara sauce, some gruyere and parmesan cheese, onion, and garlic. I baked it in the oven and sprinkled a little bread crumbs over it. I served it with some roasted asparagus. My husband was amazed! This meat-loving man of mine actually said it was a “do-over”. Below is what is looked like when it came out of the oven:

All of these recipes were very simple. Because I am so busy with various things in life (as are you I’m sure) including a full time job I need recipes that are quick and easy. I also took advantage of Pinterest (love!) so that I can save these items and not have to take more time to search them. They will always be in a special spot I can pull up quickly and then make these dishes.
I will share the recipes I find and use with you on my Facebook page (Fit Busy Female). And just so you know, my husband is actually the cook in our family. I enjoy it and do my share but when it comes to the good meals, he usually takes over. I point this out because even though I am no amazing chef and also very busy, I can still squeeze in that time for a quick healthy meal. With the hubby’s seal of approval (and enjoyment!), we are committed to one meatless dish a week and one dinner salad. Recipes that are easy and quick to cook while being healthy so we don’t end up grabbing fast food!! I will keep you updated on where I find more great dinner salad and meatless dish recipes!
