Quick/Healthy Breakfast Idea

Since I’ve become a full time working mom now, I have realized I need to be a lot more efficient and I need simple, quick recipes to make sure I actually get to eat. Breakfast is such an important meal and to me, it makes a difference in my whole day. I just have to eat breakfast or I have zero energy… and I’m not such a nice person either!

So I realized I need something quick that I can make and will let me get out of the door on time. I decided to make my own breakfast sandwich so it’s not anything gourmet but it’s good, quick, and makes sure you fill up before heading out.

I started making them so that you can freeze them and all you have to do is pop it in the microwave. I made 10 of these on a Sunday and it took about 15 – 20 minutes total to make them. I froze them individually and then we had breakfast for the week!

You can really mix these up however you like. I chose to use an English muffin for the bread and the sandwich is made of egg, turkey bacon, and a slice of cheese. I wrapped them each in clear wrap and loaded them up in the freezer.

Heating them up was a little more challenging because the middle was staying frozen. My husband is actually the one who realized that you need to cook them on defrost in the microwave for 2 minutes in order to cook them correctly. Or you could probably just use less heat and not put it on high heat for your microwave.
Here is the extremely simple recipe!


English muffins (I use Thomas 100% whole wheat)
Turkey bacon
Cheese (I used organic cheese slices)


Break in half the English muffins and set aside

Cook turkey bacon slices – a slice per sandwich. I cook mine in the oven at 350 degrees.

While the turkey bacon is cooking, cook up an egg.

I lightly spray the pan with olive oil spray and dropped the egg right in there. I usually break up the yolk with a fork (just because I like to), then flip it over once it looks like the first side is cooked. Once the egg is cooked how I like it, I set it aside on a plate (you want it to be like an egg patty).

Now, just assemble your sandwich!

I put the egg on the bottom side of the English muffin, then a piece of turkey bacon, then a slice of cheese, and top it with the top of the English muffin. Wrap it in clear wrap and that’s it! (I also had a little helper as you will see in the pictures below 🙂 )
