Recipe: Cowboy Stirfry

My stepmom introduced me to a new favorite recipe so I have to give her credit here. It is super simple and quick to prepare. Plus, my husband absolutely loves it. He calls it the Cowboy Stir-fry.

This recipe has 3 ingredients (seriously!) and is delicious. It does take an hour to cook but it’s so easy to make so we don’t mind just popping it in the oven to cook. It’s also pretty healthy and I imagine you could mix it up however you like and add some different ingredients if you want to.

So if you are looking for a super simple, tasty, and easy recipe, this is a great one!

Ingredients:
Package of small red potatoes
Package of chicken or turkey or beef sausage (I used chicken)
A bunch of broccoli

Prep:
Cut red potatoes and sausage up into bite size chunks. Cut off the heads of broccoli.

Cook:
Preheat the oven to 400 degrees.

Put only cut up red potatoes onto cookie sheet/baking pan. Toss with olive oil, salt, and pepper. Pop into the oven for 30 minutes.

After the 30 minutes, take them out and add the sausage and broccoli to the pan. Spray with cooking spray and I add a little more salt and pepper.

Put back into the oven for 30 more minutes. And dinner is DONE!
